Ingredients:
- 200g rice vermicelli noodles
- 250g boneless chicken breast, thinly sliced
- 2 tablespoons vegetable oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/2 cup frozen peas
- 2 eggs, beaten
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
After soaking in hot water for approximately five minutes, the rice vermicelli noodles should be soft
After draining, set aside
One tablespoon of vegetable oil should be heated over medium-high heat in a wok or large skillet
Stir-fry the chicken slices until they are cooked through
After taking the chicken out of the wok, set it aside
To the wok, add the final tablespoon of vegetable oil
Add the onion slices and minced garlic
Stir-fry the onion for two to three minutes, or until it turns translucent and fragrant
To the wok, add the frozen peas, julienned carrot, and red bell pepper
Allow the vegetables to soften for a further two to three minutes while stirring them
After pushing the veggies to one side of the wok, fill the empty space with the beaten eggs
Cook the eggs through by scrambling them
After draining and soaking the rice vermicelli noodles, add the cooked chicken back to the wok
After evenly distributing the curry powder over the ingredients, stir-fry them for a few minutes to ensure that everything is heated through and well combined
Stir-fry the noodles for a further two minutes after adding the fish sauce and soy sauce
To taste, add salt and pepper for seasoning
Take off the heat and add some fresh cilantro leaves as a garnish
Enjoy your delicious Singapore noodles with chicken while theyre hot
