- 1/4 cup chopped pecans
- 1/4 cup sugar-free chocolate chips
- 1/4 cup brown sugar substitute
- 1/4 teaspoon salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the almond flour, coconut flour, softened butter, and granulated sweetener
Mix until a dough forms
Add the egg and vanilla extract to the dough, and mix well to incorporate
Fold in the chopped pecans and sugar-free chocolate chips into the dough
Divide the dough into small portions and roll each portion into a ball
Place the balls onto the prepared baking sheet
In a small bowl, mix the brown sugar substitute and salt
Sprinkle a pinch of this mixture onto each cookie dough ball
Use a fork to gently press down on each cookie dough ball, creating a crisscross pattern and slightly flattening the cookies
Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
Once the cookies are completely cool, they are ready to be enjoyed
