This Paleo version of ramen is a tasty and nutritious take on the classic dish, made with zucchini noodles rather than wheat ones. Its flavorful and ideal for a warm, filling supper.
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 4 medium zucchinis, spiralized into noodles
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons coconut aminos
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes adjust to taste
- Salt and black pepper to taste
- Sliced green onions and cilantro for garnish
Instructions:
In a large pot, heat the olive oil over medium-high heat
Add the minced garlic and grated ginger
Saut for 1-2 minutes until fragrant
Add the sliced chicken breasts and cook until no longer pink, about 5-7 minutes
Pour in the chicken broth and bring it to a simmer
Let it simmer for 10 minutes
Stir in the coconut aminos, sesame oil, and red pepper flakes
Season with salt and black pepper to taste
Add the spiralized zucchini noodles and simmer for another 3-4 minutes until they are just tender
Serve hot, garnished with sliced green onions and cilantro
