Ingredients:
- 1 cup diced rhubarb
- 1 cup diced strawberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 package pre-made puff pastry dough
- 1 egg, beaten for egg wash
- Powdered sugar, for dusting optional
Instructions:
Warm the oven up to 375F 190C and put parchment paper on a baking sheet
Diced rhubarb, strawberries, sugar, cornstarch, and vanilla extract should all be mixed together in a bowl
Mix the fruit until its all covered
Put some flour on a surface and roll out the puff pastry dough
You can cut it into squares or circles, depending on what you like and what size tart molds you have
Put a small amount of the strawberry-rhubarb filling into each tart mold
To make a rustic tart, fold the edges of the pastry over the filling
Brush the edges with egg wash to make them golden
Place the filled tarts on the baking sheet that has been prepared
After the oven is hot, bake for 20 to 25 minutes, or until the filling is bubbling and the pastry is golden brown
Take the tarts out of the oven when theyre done and let them cool a bit on the baking sheet
If you want, you can sprinkle powdered sugar on top before serving
