Ingredients:
- 1 pound cherry tomatoes
- 8 slices bacon, chopped
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions:
Preheat your oven to 300F 150C
Place the cherry tomatoes on a baking sheet and roast them in the preheated oven for about 30 minutes, or until they are slightly wrinkled and caramelized
Remove from the oven and set aside
In a large skillet, cook the chopped bacon over medium heat until it becomes crispy
Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease
Leave about 2 tablespoons of bacon fat in the skillet
In the same skillet with the bacon fat, add the finely chopped onion and minced garlic
Cook over medium heat until the onions are soft and translucent, about 5 minutes
Stir in the roasted cherry tomatoes, brown sugar, apple cider vinegar, and red pepper flakes
Cook, stirring occasionally, for another 10-15 minutes until the mixture thickens and becomes jam-like in consistency
Return the crispy bacon to the skillet and mix it into the tomato jam
Cook for an additional 2-3 minutes, allowing the flavors to meld
Season with salt and pepper to taste
Remove from heat and let the bacon jam cool for a few minutes before transferring it to a food processor
Pulse a few times until you reach your desired jam consistency
You can make it as chunky or as smooth as you prefer
Let the bacon jam cool completely before storing it in an airtight container in the refrigerator
It will thicken further as it cools
Serve your Slow Roasted Tomato Bacon Jam on toasted bread, as a topping for burgers, or as a condiment for your favorite dishes
