Almost Raw Chocolate Chunk Cashew Bites

These almost raw chocolate chunk cashew bites are a delightful vegan treat. They are packed with wholesome ingredients like cashews, oats, and cacao nibs, making them a healthier alternative to store-bought snacks. Enjoy the rich flavors and satisfying crunch in every bite

Ingredients:

  • 1 cup cashews, soaked for 2 hours
  • 1/4 cup rolled oats
  • 1/4 cup cacao nibs or dark chocolate chunks
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil, melted
  • Pinch of salt

Instructions:

Drain and rinse the soaked cashews

In a food processor, blend cashews, rolled oats, maple syrup, coconut oil, and salt until a sticky dough forms

Add cacao nibs or dark chocolate chunks to the dough and pulse a few times until combined

Scoop out small portions of the dough and roll them into bite-sized balls

Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to set
