Ingredients:
- 1 cup cashews, soaked for 2 hours
- 1/4 cup rolled oats
- 1/4 cup cacao nibs or dark chocolate chunks
- 2 tablespoons maple syrup
- 1 tablespoon coconut oil, melted
- Pinch of salt
Instructions:
Drain and rinse the soaked cashews
In a food processor, blend cashews, rolled oats, maple syrup, coconut oil, and salt until a sticky dough forms
Add cacao nibs or dark chocolate chunks to the dough and pulse a few times until combined
