Ingredients:
- 2 cups all-purpose flour
- 3 eggs
- 2 cups milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1 cup crema pastelera pastry cream
- 1/2 cup sugar for caramelizing
Instructions:
Put the flour, sugar, and salt in a bowl and mix them together
Bring the eggs, milk, melted butter, and vanilla extract together in a different bowl and mix them with a whisk
Mix the wet and dry ingredients together slowly while whisking them together until the batter is smooth
Put a nonstick skillet on medium heat and use butter or oil to lightly coat it
Add a little batter to the pan and swirl it around to cover the bottom evenly
This will make a thin pancake
It will be done after about two minutes when the bottom is golden brown and the edges begin to lift
For another two minutes, flip the pancake over and cook the other side
Take the pancake out of the pan after its done and set it aside
Do it again with the rest of the batter, and then stack the cooked pancakes on a plate
Put a small amount of crema pastelera on each pancake after they are all done cooking and then roll them up
In a different pan, melt the 1/2 cup of sugar over medium-high heat
This will turn it into caramel
Carefully dip each filled pancake into the caramel, making sure to cover all of it, and then put it on a plate to serve
Before you serve, let the caramel cool and harden
